The first time Big Tex made smash burgers over mesquite, he didn't call 'em smash burgers. He called them supper. Just beef on hot cast iron, pressed hard over coals. Proper smash burgers require high heat: enough to sear fast, build that crust, and lock in the flavors. Mesquite is made for that kind of work. It burns hot, hits quick, and gives meat a smokier bite.

  • 1 lb 75/25 or 80/20 ground beef
  • 4 burger buns
  • 4 slices American cheese
  • Salt and black pepper, to taste
  • Mesquite charcoal, enough for one hot grill setup
  • 1–2 tablespoons butter or beef tallow for the griddle
  • Pickles, onions, lettuce, or other toppings
  • Jalapeños, Big Tex’s preference

Directions

  1. Roll the beef into loose 3.5 to 4-ounce balls. Do not pack them tight.
  2. Light the mesquite charcoal and let it burn down until you have steady, hot coals.
  3. Set the cast iron griddle over the coals for 5 to 10 minutes, until it is hot enough that the beef sizzles hard on contact. Add a little butter or beef tallow.
  4. Place the beef balls on the griddle and smash them with a cast iron press until they are about 1/4 to 1/3 inch thick.
  5. Cook for 60 to 90 seconds, until the bottom has a deep crust and the edges are crisp.
  6. Scrape under each patty with a metal spatula, then flip.
  7. Add cheese immediately after flipping. Shut the lid and cook for about 45 to 60 seconds, just long enough to melt the cheese without drying out the patty.
  8. Toast the buns on the griddle.
  9. Stack the patties on the buns, add toppings, and serve hot.

Pro Tips

  • Throw jalapeños and onions on early.
    While the mesquite charcoal is burning down and the griddle is heating up, toss sliced onions and jalapeños onto the iron with a little butter or beef tallow. They will soften, char, and be ready by the time the burgers come off.
  • Use parchment paper when smashing.
    Place a small square of parchment between the cast iron press and the beef before smashing. It keeps the meat from sticking to the press and helps you get a cleaner, harder smash.
  • Do not smash twice.
    Smash once, right when the beef hits the griddle, then leave it alone. Pressing again after the crust forms only pushes out the fat you worked so hard to keep.
